Honey and cinnamon spelt cookies
Sweet, spiced and deep in flavour, this honey and spelt cookie recipe is a dairy-free delight. A hint of cinnamon provides a warming aroma, which beautifully complements the nutty flavour of the spelt flour.

Ingredients
175g of wholemeal spelt flour
1/2 tsp baking powder
2 tsp ground cinnamon
100g of honey
100ml of sunflower oil
Instructions
Step 1
Preheat the oven to 190°C/gas mark 5 and line a baking tray with baking parchment
Step 2
Sieve the flour, baking powder and cinnamon into a bowl and stir to combine. Add the honey and oil and stir to make a thick batter
Step 3
Take a good teaspoon of batter and place it on the prepared baking tray. Repeat with the remaining batter, leaving space for each cookie to expand
Step 4
Bake for 12–15 minutes, then remove from the oven and allow to cool slightly on the tray a little before transferring to a cooling rack. They will be quite soft after baking, but will firm up as they cool
